Sweet potatoes are one of my favorite foods to meal prep for breakfast! In all honesty, this recipe came to be because I am struggling city when trying to use the mandolin slicer. Also, I don’t trust myself cutting the sweet potato lengthwise without chopping off my fingers!
This is where mini sweet potato toasts were born! It is 10x easier to chopped the potatoes up width wise and plus they look cute. I layer these toasts on a plate and pile it high with my vegetables of choice and of course some eggs. Another great way to have sweet potato is by making these into mini sliders!
Mini sweet potato sliders would be great especially for the holidays! You can make them sweet by topping it with nut butter or savory with a pesto and chicken! The options are endless when it comes to the sweet potato.

Mini Sweet Potato Toasts
A delicious mini take on the classic sweet potato toasts!
- 3 Large Sweet Potatoes
- Spray Olive Oil Trader Joe's Brand
- Salt & Pepper to Taste
Have the oven preheating to 415 degrees Fahrenheit and line a baking sheet with parchment or tin foil.
Scrub the potatoes with a vegetable brush and pat dry.
Begin at the ends and cut the potatoes into little circles.
Put the potatoes on the sheet in a single layer and spray with olive oil and salt + pepper.
Pop them in the oven for 20-minutes and let cool before serving or storing in a container.
Tips and Tricks
Put oven on high broil and cook potatoes for an additional 1-2 minutes for a crispier toast!
When I meal prep these, they usually last me 4-5 days. I highly recommend putting some bleach-free paper towel in the container to prevent them from getting soggy! If you make this recipe, but sure to tag me on Instagram!
