If you’re anything like me, the combination is peanutbutter and chocolate. There is just something about that sweet and salty taste that is just bomb af. As a kid, I can remember always sticking a spoon into the peanutbutter jar and then dipping it into a bag of mini chocolate chips. Not going to lie, I occasionally still do it…
My go-to brand of peanut butter was the stereotypical Skippy or Jif. As I got more into reading ingredient labels rather than just the nutrition label, I started to look for better choices. With some peanutbutter (or any nut butter brand) it isn’t just the nut in the ingredient label. It more often times than not has sugar, corn syrup, and other preservatives.
That’s no Bueno for me!
I gradually made the change to natural peanutbutters, but I still wasn’t completely happy. However, I was making progress (pats self on the back). The moral of the story is to find nut butter brands where the only ingredient is the nut or better yet make your own!
As for chocolate, EatingEvolved is a brand that I highly recommend. The ingredient list is under very minimal and it tastes delicious! Their spreads are a completely different story. As for chocolate alone, I recommend the 72% or 100% for baking (or dipping in the nut butter jar)! Those are my favorites, but enough of my chitchatting and let’s get to the recipe!
Doughy Peanutbutter Cookies
All you need is 4 simple ingredients, a bowl, and an oven!
- 1 cup Natural, Drippy Peanutbutter
- 1/3 cup Coconut Sugar
- 4-5 tbsp Coconut Flour
- 1/2 bar Dark Chocolate (I used EatingEvolved)
Preheat the oven to 350 degrees Fahrenheit + line a baking sheet with parchment paper.
Place the peanut butter and coconut sugar into a bowl +mix till combined.
Gradually add in the coconut flour till you have a batter like consistency.
Use a cookie scoop + place on the baking sheet.
Bake for 10-12 minutes until lightly golden + let cool.
In a separate bowl, break up your chocolate bar + place in a bowl. In 10-second increments melt in the microwave until smooth.
Drizzle the chocolate on top + place cookies in the fridge to harden the chocolate and firm up the cookies.
Tips and Tricks
The number of cookies can vary on how big your cookie scoop is!
If you aren't a fan of the gritty sugar texture, place your sugar into a season grinder or blender and grind/blender until you have a powder!
