One of the things I used to eat all of the time was oatmeal. You would find me making my oatmeal piled high with berries and nut butter. However, now that grains and I don’t get along I had to find a way to make oatmeal grain-free. That is when I found cauliflower oats!
When going gluten-free, it can feel as though you are missing out on all of the yummy pastries. Similarly to the oatmeal, I also missed eating blueberry muffins. There is just something about toasting a muffin and lathering it with butter. I am clearly hungry as I type this, but this is what sparked me to create this cauliflower oat recipe.
Not only is it delicious, but it is full of healthy fats from the nut butter and coconut flour! Another great aspect of cauliflower oats is you are getting a portion of your vegetables. Better yet it doesn’t even taste like cauliflower. I highly recommend making these cauliflower oats right now (or maybe tomorrow morning)…
Since I am lazy I didn’t make my own cauliflower for the cauliflower oats, but I purchased some from Trader Joe’s and it is surprisingly cheap at Whole Foods too.
Blueberry Almond Butter Muffin Cauli Oats
- 1 cup Cauliflower Rice (Frozen)
- 1/4 cup Almond Milk
- 0.5 tbsp Coconut Flour
- 1/2 tsp Ground Cinnamon
- 0.5 tbsp Maple Syrup
- 2 tsp Almond Butter
- 1/8 tsp Ground Nutmeg
- 1/4 cup Blueberries
- In a saucepan, put in your cauliflower and almond milk + cook for 4-6-minutes on low.
- Turn the stove off and place in blueberries, maple syrup, almond butter, and seasonings.
- Stir till well combined and the blueberries have broken down a bit.
- Add in your coconut flour and stir till it thickens like oatmeal.
- Remove from the heat and top with more almond butter and blueberries.
Notes: Double this recipe if serving for more than 1 person.
