As a kid, vanilla cake was my all time favorite cake. Nothing is better than vanilla cake with chocolate frosting. However, no one is in the mood to make a whole cake. This simple mugcake recipe is made within minutes and won’t spike your blood sugar as a box cake will. It is a win-win in my book.
What I truly love about this cake is that it make me feel like a kid. You remember the times of no worries about anything and I mean anything. Those were the best years and now understand why parent says, “You don’t want to grow up too fast.” Honestly, the biggest stressor a child faces is when they accidentally color outside the lines. Remember those days? I know I do!
What is even better is that this cake is completely gluten and dairy free. It uses a premixed gluten free all purpose four so now combining flours and hoping for the best. It also features ghee, which is clarified butter. Fourth and Heart has a vanilla infused ghee that makes this cake decadent af.
This cake is also perfect for the holidays. You can simply make this cake the night before and bring it as your dessert to a party. This reduces any stress about feeling left out when everyone else has treats. Some delicious toppings are chocolate frosting (obvi), nut butter drizzle, chopped up chocolate, or berries. Simple Vanilla Cake For One
This is a great dessert (or snack we don't judge) that reminds you of that classic boxed cake flavor!
- 3 tbsps Gluten Free All Purpose Flour
- 1/4 tsp Baking Soda
- 1/4 tsp Vanilla Extract
- 1 tbsp Maple Syrup
- 1/2 tsp Vanilla Ghee
- 1 Egg
Mix all dry ingredients in a small bowl.
Mix all wet ingredients in a small bowl.
Combine the wet with the dry and mix till you have a batter like consistency.
Pour into a mug + cook for 40-45 seconds or until done.
Top with your favorite toppings before serving!
