To be honest, chicken salad used to gross me out. There was just something about it, but now I know what I have been missing out on! I had a whole bunch of shredded chicken left over and I wanted to try something different with it. When I have seen chicken salad at the grocery store it often looks like a mess of mayo and some spices. It never looked appealing until I made my own. Making anything at home is always better amiright?
If you don’t have time to make a whole bunch of shredded chicken, pick up a rotisserie chicken and shred it! Simple as that and they are affordable as well. But let me tell you about avocados. I have been on an avocado kick! Avocadoes are a major superfood that you should consume at least 2-3x per week. It is a great source of Potassium, lowering LDL, B Vitamins, and a potential help your body absorb other nutrients.
You can throw some avocados on toast or make my grilled guacamole! By adding the avocados to the shredded chicken along with other seasonings makes this a complete meal! For those of you on a low FODMAP protocol, remove the avocados, garlic, and onions. I would recommend making your own mayo and using spices that are “safe” for you to consume.
Super Simple Avocado Chicken Salad
A perfect lunch for those who need something quick!
- 1/2 cup Shredded Chicken
- 1/2 Avocado
- 1 Garlic Clove Crushed
- 1 tbsp Red Onion Chopped
- 1/2 tsp Paprika
- Salt + Pepper
Cut your avocado + place in a bowl to mash up.
Once mashed to the texture you want, add in the chicken, garlic, and onion.
Stir until combined + add in all spices + stir on last time.
Either store in a glass container or serve immediately with vegetables or on gluten-free bread.
Tips and Tricks
You can double the recipe to make more than one serving!
It will last in the fridge for 2-3-days!
This is a great dish to make to have for a couple of days. I do recommend adding some lemon to reduce it from browning. Also, by storing your avocados in the fridge will make them last longer. As for meal prepping, I don’t recommend having longer than 3-days! Be sure to tag me on Instagram if you make the chicken salad!
